Thanksgiving ‘08

This Thanksgiving was a bit different than last year’s in that it was very planned out.  There was no 4:30 PM phone call from my husband saying that we were having a few friends over… we went food shopping the weekend in advance, and i even bought a new tablecloth!

Because we actually planned in advance, the menu was quite extensive:

Appetizers: Cheese & Crackers, Carrots and Hummus and/or Capsicum (red pepper) dip, Greek olives, and 3D’s amazing Italian stuffed mushrooms. Yum. By the time we were done with those snacks i was full already but….

Dinner: Roasted chicken with stuffing, baked in dish with carrots, potatoes, sweet potatoes (the really good, white kind), & pumpkin, home made gravy, Amazing mushroom and zucchini lasagna, Sauteed asparagus, Candied yams, & a salad (which no one wanted to eat!!). Ok at this point i was ready to die. buckeye-balls

Dessert: 3D made an apple pie (from scratch, including dough), & a chocolate-covered Pecan pie (graham cracker crust imported from America on our last trip home!) & these things from Ohio called Buckeye Balls, which are balls made of peanut butter & confectionery sugar and then dipped in melted chocolate and left in the refrigerator to harden. Those were so awesome. Our Canadian friend also brought the best pumpkin pie ever, made completely from scratch. All pies were served with ice cream and whipped cream for those who could fit one last bite of food. I could not! :)

thanksgiving-08_5thanksgiving-08_6The pies — yummy!!!! And after we were all done cleaning–ah so tired!!! I love the holidays. I can’t wait for the time when we can be together with our families for the holidays again.  Maybe next year? ;)

We have a lot to be thankful for this year including the beginning of a new administration in our federal government, 3D’s graduation from medical school, our loving friends & family, and the thus far healthy pregnancies of both our sister-in-law and a good friend from NJ. And, as always, we’re thankful for the yummy leftovers we’ve been eating all week!!! :)

In other news, i have my psych exam on Thursday. Ughhh.

    Love the photos. Good luck for the exam. Hope you and 3D are enjoying the time before internship starts. Will you be going back to the states the next year? Does that mean he has to repeat internship there?

    Yeah the plan is to get back to the US sometime in the near future and then we would both have to repeat any post-grad training we might have completed by that time. But the good thing is that 3D can start earning money (better money than in the US with over-time) and that we can still be together! That’s what’s most important to us.
